Grady-White Fish Ceviche
½ pound firm white fish (kingfish, wahoo)
1 small onion, finely diced
1 tsp garlic salt
1 tsp Worchestshire sacue
3 jalapenos, seeded and finely diced
6 fresh limes, juiced
2 tbs finely chopped pimentos
Cut raw fish into small bite-size pieces. Plate fish, jalapenos and onions in a glass or ceramic bowl. Mix garlic salt with lime juice and pour over fish. Add enough lime juice to cover fish. Cover bowl with plastic wrap and chill overnight. Add chopped pimentos, and drain juice if desired, before serving.
